Is there a way to check whether or not a product key would work with a certain version of Windows 7 without actually installing Windows 7? I don't really feel like going through the installation just to find out my key doesn't work.

Like an automated thing?
I believe that there is a tool that you can use called Microsoft PIDX Product Key Checker.

After a little more research I can't find it on Microsofts website through my technet subscription.
When using google there are some Windows 7 PIDX checkers out there from other sources, so not sure if they are legit.
I tested one out and it did tell me what the key was for but i haven't been able to see if that program transmits data out.
