A few points of view:
If OS 5.0 were to available for users just by buying the new devices why then build it for devices already released?
Now going to the topic of this thread, there several reasons to make the apps work on 5.0, all of them already mentioned here, which lead me to the following explanation one by one:
BIS 2.8: will include new features compatible with OS 5.0 only, but it will keep those necessary features to work with older devices with some limitations for them.
OS 5.0 Release: it was announced by RIM that it will go official before the end of this year, so they're just getting ready, making the apps compatible with 5.0 will give them some feedback to have them ready by the release date.
New devices release: new devices are to be delivered with OS 5.0 so make a lot of sense making the apps compatible with that OS.
And finally seems like RIM is taking advantage of the already leaked OS and have gotten many bug figured as a consequence of that, plus, we the end user, are the best guineas pig they got to test, brick the phone and they're not responsible of that since you're installing a non official OS.
