I downloaded BlackBerry Handheld Software v5.0.0.1168 (EastAsia) from the link. As a user in the US, will it matter that it is "EastAsia"? Or will it install and work fine on my 8520?

It will work just fine for you, make sure you delete the Vendor.XML file though. You can find this file here:
My Computer -> Program Files -> Common Files -> Research In Motion -> AppLoader -> Vendor.XML

Everything went ok, however, there was an issue on the BES where my account had to be recreated - could be coincidence.
The package was 1168, but the ver is 681
